Watermelon Cooler for Summer Hydration

One of my favorite, cold summer drinks is refreshing watermelon juice and coconut water. It is so thirst quenching and instantly rehydrating. It is our custom to greet our retreat guests with this delicious drink upon arrival on the Spa Living Retreat in Costa Rica. Fortunately we can have it anytime!

While providing a great dose of potassium and electrolytes that can be lost while perspiring, this cooler is supremely hydrating and alkalinizing as well. Research studies suggest that nutrients in coconut water are found to have significant anti-ageing, anti-carcinogenic, and anti-thrombotic (anti-clot formation) effects. Coconut water is a great source of electrolytes such as Potassium, antioxidant vitamins such as Vitamin C, minerals and enzymes. It is a great way to hydrate the body and is known to greatly benefit the health and glow of the skin. Fresh juice from young coconuts is always best. Bottled coconut water labeled "raw" in the refrigerator section has a better taste and health property than canned. Canned or bottled coconut water will also do in a pinch. Coco-Watermelon Cooler 1 cup freshly made watermelon juice 1 cup coconut water 2 cubes frozen wheatgrass juice (optional) Juice the watermelon in a juicer or puree in a blender and strain. Mix the strained watermelon juice and coconut water together and serve cold.
